Cho 20g đường và 20g dầu ăn vào chảo nhỏ, thắng cho đến khi đường cháy và có màu nâu đẹp. Nhanh tay đổ dứa đã cắt miếng nhỏ vào chảo đảo đều cho dứa và caramel quyện vào nhau.
Đổ dứa vào khuôn. Đánh lòng trắng trứng cho đến khi hỗn hợp bọt khí nhỏ và mịn. Cho từ từ 70g đường vào đánh đến khi bông cứng. Lòng đỏ trứng đánh tan rồi trộn từ từ với hỗn hợp lòng trắng vừa đánh bông. Rây bột mì vào hỗn hợp trứng, trộn đều, nhẹ tay.
Đổ nốt 10g dầu ăn theo thành bát chảy xuống, rồi trộn đều. Đổ bột bánh vào khuôn. Cho khuôn bánh vào lò nướng ở nhiệt độ 150 độ C trong khoảng 50 phút.
